Instagrams latest obsession could be the taco you have been dreaming of.

Tacos are delicious. Ice cream is delicious, but what about an ice cream taco? That sounds like a downright revelation. Especially with Mexican food being a global phenomenon, this new twist on the original savoury taco is becoming an Instagram sensation.  Especially at a place in California called the Sweet Cup, where they have created the most artistic looking taco- inspired dessert.

According to a video that was recently made by the Thrillist, the shop owner Kenny Tran at first wanted to open up a bubble tea café, however his brother suggested they add ice cream alongside the menu. Tran used his knowledge on the various flavours in bubble tea and combined them with ice cream and presto we have an ice cream taco!

For anyone who has not yet heard of it, it is essentially flattened ice cream, that is topped with almost anything delicious before being rolled up into a sugary, colourful taco cone and there you have it!

Ingredients

  • 2 tbsp. cinnamon
  • 1/4 cup. Sugar
  • 2 cup chocolate chips
  • 2 tbsp. butter
  • 3 Small flour tortillas
  • 1/4 cup. Rainbow sprinkles
  • Vanilla ice cream
  • Caramel

Directions

  1. Make cinnamon sugar: On a small plate, combine cinnamon and sugar and mix until fully combined.
  2. Melt chocolate chips over a double boiler until smooth, and then set aside.
  3. In a small skillet over medium heat, heat butter. Add tortillas and sauté, one at a time, until golden and crisp, 2 minutes per side. Dredge both sides of the tortilla in cinnamon sugar.
  4. Shape the tortillas: Fold tortillas in half and dip the outer edges in melted chocolate, then dip in sprinkles. Flip over a muffin tin and stand the tortillas upright. Let sit until chocolate is hardened, about 10 minutes.
  5. Fill each taco with 3 scoops of vanilla ice cream and top with caramel. Freeze until hard, at least 30 minutes.
