Sometimes late at night, when you’re warm in your bed and you want nothing more than to just get some sleep, that craving will suddenly hit. You’re stomach starts telling you that it needs a midnight snack. However it’s not exactly the healthiest idea in the world as your metabolism slows down while your body is sleeping. If you’re anything like me, you don’t really care. Something that I like to do is have light and delicious snacks on hand, just in case I fall victim to the craving. Here are some of my favourites.
Ingredients: Crackers, cream cheese, tomatoes
You can choose any flavour cream cheese you wish and simply spread on crackers and add tomatoes for added flavour.
Ingredients: Jalapenos, cream cheese, dough
Pre-heat oven. Cut dough into triangles and cut those pieces lengthwise into smaller triangles. Cut Jalapenos in half, remove seeds and add cream cheese into the halves. Roll the triangle piece around the jalapeno and place on an ungreased cooking sheet. Place in oven and bake until the dough is golden brown.
Ingredients: Lemons, cream, sugar
Over medium heat, stir together cream, sugar and lemon zest and bring to a boil. Stir often for five minutes. Then add lemon juice and stir for five minutes. Let the mixture cool down for another five minutes. Using a fine-mesh strainer, strain into a container. Pour into cups or in whatever you wish to serve it in. Place cups in refrigerator until it sets.
Ingredients: Desiccated coconut, chocolate
Melt chocolate in the microwave. Mix in coconut and place spoonful’s on a tray. Place tray in refrigerator until firm.
